sunday baking

today, i went for easy. not just easy, but easy peasy gooey and good. working in such a state of brainless following i didn't modify the recipe at all, though i think it would've been equally delightful using whole wheat flour (at least half) and adding some flax to the topping. i'll try it out next time, as i'm sure this one will get repeated.


easy apple coffee cake

2 c. all purpose flour
1 c. granulated sugar
2 tsp. baking powder
1/4 tsp. salt
1 large egg, beaten slightly
1 c. milk
2 tbsp. oil
2 large apples (I used fugi's)
1 c. firmly packed brown sugar
1 tsp. ground cinnamon
1/3 c. butter, melted and then cooled
1/4 c. chopped walnuts

mix flour, sugar, baking powder and salt in large bowl. add egg, milk, and oil; stir til well moistened. spoon batter into greased and floured 9x13 inch pan. arrange apples in rows on top of batter. in a small bowl, mix brown sugar, cinnamon, and butter; crumble over the apples.

bake at 35o until cake pulls away from sides of pan, about 45 minutes (though you may not be able to see it clearly with the melty sugar topping). let cool in the pan for 10 minutes. best served warm, and really really delightful with a dollop of whipped cream. yum!

makes 10 servings.
